To many Chinese, there are no greater delicacies than the creatures of the sea. People eat fish to ring in the lunar new year; crab or lobster complete a wedding banquet.

But growing appetites, the world’s largest fishing industry, and decades of development have strained the country’s seas. Coastlines have been reshaped, climates changed, waters polluted, and fisheries emptied out.
